Procedure:
- Manual harvest when the right state of ripeness is reached.
- Press destemming in automatic temperature-controlled winemakers.
- Pre-fermentation cold maceration at 8°, alcoholic fermentation at 26 °C to have optimal color and tannin extraction.
- Several daily cycles of processing the skins for soft, elegant tannins.
- At the appropriate time fill the 1st and 2nd passage American oak barrels.
- Yeast processing is carried out for some time to improve the roundness and complexity of the wine.
- Malolactic fermentation is also completed during this period.
- After racking, the wine still remains in the barrels for 6 months.
- Optimal proportion blending is done before bottling.
- Elegance, finesse, extreme roundness, and slight residual sugar are the special features of this wine designed for an attentive and modern audience.
