Description:

Manual harvest when the right stage of
maturation.
No added sulfites
Crush-destemming in horizontal press.
Soft pneumatic pressing of the skins.
Must flotation
Heating of the mass to 16°C to have the beginning of the
alcoholic fermentation.
At the end of alcoholic fermentation I decant into stainless steel tanks
thermoregulated, and processing on their own yeasts.
If necessary, fermentation is also completed
malolactic.
After racking no sulfites are added the wine still remains
In stainless tanks for at least a couple of months.
Before bottling, blending is done between the different
tanks and filtered.
